How it is made
Tamarind pods are shelled and soaked so the pulp lifts away cleanly, and dried plums are steeped separately until soft. Nothing artificial is added — no acidity regulators, no colour, no essence.
How to take it
Two tablespoons in a glass of chilled water, taken about half an hour after a heavy meal, is how most people use it. A pinch of black salt sharpens it further. In hot weather it is equally good over ice in the afternoon, when a sweeter drink would sit badly.
